We have decided to commit to one month of being vegan, and February is the lucky month. We have been starting to slowly take out eggs, butter and milk, to prep ourselves. The hardest thing to cut out will be cheese, no more twice baked potatoes, grilled cheese sandwiches, or tacos with cheese. The hunt is now on for good vegan recipes, and restaurants that are vegan friendly, so if you have suggestions let us know!
This is a really tasty dish I make sometimes:

ingredients:
2 cans of fava beans
1 medium onion
4 cloves of garlic
2 medium tomatoes
4 tbsp. tahini
2-3 tbsp. olive oil
Fresh parsley, chopped
½ tsp. cumin
pepper
lemon
injera -or- flour tortillas -or- pitas
directions:
Drain and rinse fava beans
Chop onions and garlic
Heat 2-3 tbsp. olive oil in a large fry pan
Sauté onions and garlic over medium heat for 5 minutes
Add tomatoes and cook for another 5 minutes
Add fava beans and heat
Lightly mash beans with a fork during cooking, leaving large pieces intact
Add tahini, cumin and pepper
Garnish with fresh parsley
Serve with a lemon wedge
Enjoy by scooping with injera or warm flour tortillas
(or stuff into pita breads)
